Senasa invita a innovar en la parrilla con la carne de búfalo

Según un informe del Senasa, la carne de búfalo es una excelente opción para una alimentación saludable porque, además de aportar proteínas y minerales, contribuye a prevenir enfermedades cardiovasculares ya que posee un alto valor nutritivo y escasa cantidad de grasa y colesterol.

Este alimento tiene apariencia, sabor y forma similar a la bovina, y hasta sus cortes comerciales poseen la misma denominación. De hecho, es un tipo de carne muy consumida en países como Brasil y durante los últimos años incluso ha ido conquistando el paladar gourmet argentino, comenzando por el de los hogares del noreste nacional (NEA).

Ganar terreno

Las características climáticas y geográficas del Nordeste argentino, donde hay abundante presencia de bañados, generan un ámbito propicio para la producción de búfalos, concentrando el 81% del stock de bubalinos del país.

Según datos del Sistema Integral de Gestión de Sanidad Animal (SIGSA) del Senasa,  a mayo del 2019, la provincia de Corrientes es la principal productora de este especial tipo de carne con 43.608 búfalos, seguida por Formosa que posee 41.108 cabezas, de Chaco con 19.364 y de Misiones con 2516.

Sin embargo, este producto también se puede encontrar en restaurantes y mercados de Buenos Aires, en donde los consumidores que se animen al desafío de probar un alimento saludable y diferente pueden corroborar sus características por sí mismos.

Controles del Senasa

El Servicio Nacional de Sanidad y Calidad Agroalimentaria (Senasa) supervisa, en los frigoríficos que habilita para el tránsito federal, la implementación de sistemas de gestión y aseguramiento de la inocuidad, tales como Buenas Prácticas de Manufactura (BPM), Procedimientos Operativos Estandarizados de Sanitización, Manejo Integrado de Plagas (MIP) y Análisis de Peligros y Puntos Críticos de Control (HACCP).

Para preservar la inocuidad de esta carne bubalina, el Senasa realiza planes de muestreo bacteriológicos para la determinación de bacterias indicadoras y patógenas, entre ellos, el Plan Nacional de Control de Residuos e Higiene en Alimentos (CREHA) que analiza que no haya restos de medicamentos, metales pesados y pesticidas. Además, se realiza el examen de órganos y músculos en playa de faena (examen post mortem) con el objetivo de diagnosticar patologías capaces de afectar la salud pública.

En definitiva, dada la tendencia de los consumidores a optar cada vez más por una alimentación saludable y una producción sustentable, desde el Senasa recomendamos animarse e incorporar carne de búfalo al menú ya que cuenta con beneficios nutricionales y ventajas favorables para una dieta equilibrada.
